Elevate Your Grilled Cheese
Throughout April, we’ve been celebrating one of the tastiest comfort foods by sharing some of our favorite grilled cheese recipes. This week is no exception, we’re shaking things up with Point Reyes Original Blue. It’s a rindless classic style blue cheese that is all natural and gluten-free. Original Blue has an ultra-creamy texture, and a pronounced blue flavor that’s softened by a sweet, fresh milk taste and peppery finish. Point Reyes Original Blue, Bacon & Fig Grilled Cheese
Sophisticated yet highly approachable.
Ingredients
- 3 tablespoons butter, softened
- 8 slices raisin bread
- 6 tablespoons fig jam
- 12 oz. Point Reyes Toma, shredded
- 1/2 cup crumbled Point Reyes Original Blue
- 6 slices Bianchini’s thick sliced bacon, cooked & cut in half
Directions
Butter one side of each slice of bread. Then flip the slices over and spread on the fig jam. Place equal amount of Toma, Original Blue, and bacon pieces on top of the fig spread. Place two bread slices together to create the sandwich, with the butter sides facing out.
Heat a large skillet over medium heat. Place the sandwiches into the skillet and cook until the bread is golden brown, and the cheese is melted, about 2-3 minutes per side.
Transfer the sandwiches from the skillet to serving plates. Cut in half and enjoy!
